it's been a week and half now since B went to manila for the manilart 10 event. we've been expecting he'll be back sooner, not later than a week, but some few "pinakalit" projects popped in and was forced to extend his stay. now, isn't that depressing.
for every person, they have different ways to lighten up their mood. mine was tinkering in the kitchen, making myself busy to redirect my oh-not-so-happy thought.
and when's everything done, get revenge. eat the whole thing up! *evil laugh
but due to financial constraint (cost-cutting time), i have to make do with something simple to get my revenge at.
thinking, i came up with pancake ala mode.
ingredients:
all purpose flour (but if you want it more soft and fluffy, better use cake flour. i dunno why but it seems when i accidently use cake flour, the pancake i made is fluffier than usual. fuwa-fuwa~)
baking powder
baking soda
salt
butter, melted in room temp
sugar
fresh milk
vanilla ice cream
chocolate syrup (Hershey's!)
nuts (optional)
1. in a mixing bowl, combine the flour, sugar, salt, baking powder, and soda.
2. in another bowl, whisk together milk, egg yolks, and melted butter. Blend into the dry ingredients just until all ingredients are moistened.
3. beat egg whites in another bowl until stiff peaks form. Fold into the batter until well incorporated.
4. when skillet is hot enough for a drop of water to sizzle, scoop pancake batter into the skillet, spreading slightly. When edges are rather dry and bubbles are popping and bottoms are nicely browned, about 2 to 3 minutes, turn over and cook the other side until browned, about 2 minutes longer.
5. serve with a scoop of vanilla ice cream, drizzled with chocolate syrup and sprinkled with unsalted nuts!
