one minute it's all warm and uber sunshiny and next, a raging rainshower.
psh. global warming.
because of this occurrence, most people that i am with everyday are getting weak and sick.
back when i was a kid, my mom used to make the chicken macaroni soup or what i used to call as "fever" soup. deriving from the name i gave, you now probably have an idea where this story goes. but i'll narrate it anyway. i love stories. and now i'm mumbling.
my mom usually cooks this soup whenever one of us is sick with fever or colds. she also do this whenever she runs out of ideas on what to serve for dinner. and oh, on rainy days too! i used to love my mom's version of the soup not until i developed a (somewhat) lactose-intolerance and decided to skip those kinds of food.
so along with liters and liters of cold liquids and bunches of warm motherly love, it was a fool-proof cure for whatever childhood maladies. ok. just fever and flus. erm. and some teenage angst and heartbreaks. or not.
now, more able-handed in the kitchen, i tried tweaking the recipe and skipping the lactose part of the food.
ingredients:
elbow macaroni
chicken breast
butter
garlic, onion
carrots
potatoes
corn kernels
bell peppers
spring onion (im no fan of celeries. yeck)
1. boil chicken in water. add a dash of salt. save chicken stock for later use.
shred chicken meat into strips. set aside.
2. in a soup pot, saute garlic till crispy brown and set aside. saute onion and shredded chicken meat with butter. add potatoes and carrots.
3. pour in chicken stock and additional water. let it simmer for few minutes. add the macaroni. when the macaroni is already al dente, add up the corn kernels and bell peppers. season with salt and freshly ground pepper. for those who prefer the milky one, stir in evaporated milk just before turning your burners off. with this, the creamy and err... milky smell will be retained.
4. serve in bowl, topped with crispy garlic and minced spring onions. best partnered with toast. and rainy days. ^^
